Instructions
- In a large pot, sauté the onion, garlic, and ginger until fragrant.
- Add the chopped carrots and vegetable broth. Bring to a boil, then reduce heat and simmer until carrots are tender, about 20 minutes.
- Use an immersion blender to blend the soup until smooth.
