  • 1 package refrigerated sugar cookie dough
  • 1 cup ricotta cheese
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips
  • 1/4 cup chopped pistachios

Instructions

  • Preheat oven to 350°F and spray a mini muffin tin with non-stick cooking spray.
  • Slice cookie dough into 12 equal pieces and press each piece into the bottom and up the sides of each muffin cup.
  • Bake for 12-15 minutes or until the edges are lightly golden. Remove from oven and let cool completely.
  • In a mixing bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth.
  • Fold in chocolate chips and pistachios.
  • Spoon the ricotta mixture into each cookie cup.
  • Refrigerate for at least 30 minutes before serving.
