- 1 package refrigerated sugar cookie dough
- 1 cup ricotta cheese
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup mini chocolate chips
- 1/4 cup chopped pistachios
Instructions
- Preheat oven to 350°F and spray a mini muffin tin with non-stick cooking spray.
- Slice cookie dough into 12 equal pieces and press each piece into the bottom and up the sides of each muffin cup.
- Bake for 12-15 minutes or until the edges are lightly golden. Remove from oven and let cool completely.
- In a mixing bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth.
- Fold in chocolate chips and pistachios.
- Spoon the ricotta mixture into each cookie cup.
- Refrigerate for at least 30 minutes before serving.
