  • 4 boneless, skinless chicken breasts

  • 1/2 cup cream cheese, softened

  • 1/2 cup shredded cheddar cheese

  • 1/4 cup cooked spinach (drained) or frozen spinach (thawed and drained)

  • 1 tablespoon Cajun seasoning

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon paprika

  • 1/4 teaspoon cayenne pepper (adjust to taste)

  • 1 tablespoon olive oil (for searing)

  • Salt and pepper to taste

  • 1/2 cup breadcrumbs (optional, for topping)


Instructions

  • Preheat the oven: Set your oven to 375°F (190°C).

  • Prepare the stuffing: In a medium bowl, combine the cream cheese, shredded cheddar cheese, cooked spinach, Cajun seasoning, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper. Mix well to form a creamy stuffing mixture.

  • Prepare the chicken: Using a sharp knife, carefully cut a pocket into the center of each chicken breast, being careful not to slice all the way through.

  • Stuff the chicken: Spoon the Cajun cheese mixture into each chicken breast pocket, packing it in gently.

  • Sear the chicken: Heat the olive oil in a large oven-safe skillet over medium-high heat. Season the outside of the chicken breasts with salt, pepper, and a little more Cajun seasoning. Sear the chicken for 2-3 minutes on each side, until golden brown.

  • Bake the chicken: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

 

  • Optional topping: If desired, sprinkle breadcrumbs over the chicken breasts before baking for a crispy topping.

Notes

Spice level: Adjust the amount of cayenne pepper and Cajun seasoning to your desired spice level.

Stuffing variations: You can add other ingredients to the stuffing, such as sautéed mushrooms, bell peppers, or cooked sausage, for extra flavor.
