Ingredients
-
4 boneless, skinless chicken breasts
-
1/2 cup cream cheese, softened
-
1/2 cup shredded cheddar cheese
-
1/4 cup cooked spinach (drained) or frozen spinach (thawed and drained)
-
1 tablespoon Cajun seasoning
-
1 teaspoon garlic powder
-
1 teaspoon onion powder
-
1/2 teaspoon paprika
-
1/4 teaspoon cayenne pepper (adjust to taste)
-
1 tablespoon olive oil (for searing)
-
Salt and pepper to taste
-
1/2 cup breadcrumbs (optional, for topping)
Instructions
-
Preheat the oven: Set your oven to 375°F (190°C).
-
Prepare the stuffing: In a medium bowl, combine the cream cheese, shredded cheddar cheese, cooked spinach, Cajun seasoning, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper. Mix well to form a creamy stuffing mixture.
-
Prepare the chicken: Using a sharp knife, carefully cut a pocket into the center of each chicken breast, being careful not to slice all the way through.
-
Stuff the chicken: Spoon the Cajun cheese mixture into each chicken breast pocket, packing it in gently.
-
Sear the chicken: Heat the olive oil in a large oven-safe skillet over medium-high heat. Season the outside of the chicken breasts with salt, pepper, and a little more Cajun seasoning. Sear the chicken for 2-3 minutes on each side, until golden brown.
-
Bake the chicken: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
-
Optional topping: If desired, sprinkle breadcrumbs over the chicken breasts before baking for a crispy topping.
Notes
Spice level: Adjust the amount of cayenne pepper and Cajun seasoning to your desired spice level.
Stuffing variations: You can add other ingredients to the stuffing, such as sautéed mushrooms, bell peppers, or cooked sausage, for extra flavor.
Make ahead: The chicken can be stuffed and refrigerated for a few hours before baking if you want to prepare it ahead of time.
Serving suggestion: Serve with rice, mashed potatoes, or a side salad for a complete meal.
