For the Quesadillas:

Instructions
- Prepare the Filling:
- In a bowl, whisk the eggs and milk (if using) until well combined. Season with a pinch of salt and pepper.
- Heat a non-stick skillet over medium heat and add a small amount of olive oil or butter.
- Pour in the eggs and cook, stirring gently, until scrambled and cooked through. Remove from heat.
- Cook the Vegetables and Sausage (if using):
- In the same skillet, add a bit more oil or butter, then sauté the diced bell peppers, onions, and mushrooms (if using) until softened, about 4-5 minutes.
- If using sausage, add it to the pan and cook until browned and cooked through.
- Assemble the Quesadillas:
- Heat a separate large skillet or griddle over medium heat. Place one tortilla in the skillet and sprinkle 1/4 cup of shredded cheese on top.
- Add a generous spoonful of scrambled eggs, followed by some of the cooked vegetables and sausage (if using).
- Top with another layer of cheese, then place a second tortilla on top. Cook for about 2-3 minutes on each side, pressing down gently with a spatula, until the tortillas are golden brown and the cheese is melted inside.
- Repeat with the remaining tortillas and filling ingredients.
- Serve:
- Once all quesadillas are cooked, cut them into wedges. Garnish with fresh cilantro or green onions if desired.
- Serve with salsa, sour cream, guacamole, and hot sauce on the side.
