These Blueberry Oatmeal Crumble Bars are a perfect combination of soft, buttery crust, juicy blueberry filling, and a golden oat topping. Whether served as a dessert, snack, or sweet breakfast treat, these bars are bursting with fresh fruit flavor and wholesome oats in every bite!
Ingredients
For the crust and crumble topping:

1 cup unsalted butter, melted

1 cup light brown sugar, packed

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 1/2 cups old-fashioned rolled oats

1/2 teaspoon baking soda

1/2 teaspoon salt
For the blueberry filling:

2 1/2 cups fresh or frozen blueberries

1/3 cup granulated sugar

2 teaspoons cornstarch

1 tablespoon lemon juice
-
1/2 teaspoon lemon zest (optional)
Instructions

Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.

In a large mixing bowl, combine the melted butter, brown sugar, and vanilla. Stir in flour, oats, baking soda, and salt until crumbly.

Press about two-thirds of the mixture firmly into the bottom of the prepared pan to form the crust.

In a separate bowl, toss blueberries with sugar, cornstarch, lemon juice, and lemon zest until evenly coated.

Spread the blueberry mixture evenly over the crust.

Crumble the remaining oat mixture over the blueberries.

Bake for 35–40 minutes or until the top is golden brown and the blueberry filling is bubbling.

Let cool completely in the pan before slicing into bars.
Notes
Bars can be stored in an airtight container at room temperature for 2–3 days or refrigerated for up to 5 days.
For a firmer filling, add an extra 1/2 teaspoon of cornstarch.
You can substitute half the blueberries with raspberries or blackberries for a mixed berry variation.
