Description

These Blueberry Oatmeal Crumble Bars are a perfect combination of soft, buttery crust, juicy blueberry filling, and a golden oat topping. Whether served as a dessert, snack, or sweet breakfast treat, these bars are bursting with fresh fruit flavor and wholesome oats in every bite!

For the crust and crumble topping:

  • 1 cup unsalted butter, melted

  • 1 cup light brown sugar, packed

  • 1 teaspoon vanilla extract

  • 1 1/2 cups all-purpose flour

  • 1 1/2 cups old-fashioned rolled oats

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

For the blueberry filling:

  • 2 1/2 cups fresh or frozen blueberries

  • 1/3 cup granulated sugar

  • 2 teaspoons cornstarch

  • 1 tablespoon lemon juice

  • 1/2 teaspoon lemon zest (optional)


Instructions

  • Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.

  • In a large mixing bowl, combine the melted butter, brown sugar, and vanilla. Stir in flour, oats, baking soda, and salt until crumbly.

  • Press about two-thirds of the mixture firmly into the bottom of the prepared pan to form the crust.

  • In a separate bowl, toss blueberries with sugar, cornstarch, lemon juice, and lemon zest until evenly coated.

  • Spread the blueberry mixture evenly over the crust.

  • Crumble the remaining oat mixture over the blueberries.

  • Bake for 35–40 minutes or until the top is golden brown and the blueberry filling is bubbling.

 

  • Let cool completely in the pan before slicing into bars.

Notes

Bars can be stored in an airtight container at room temperature for 2–3 days or refrigerated for up to 5 days.

For a firmer filling, add an extra 1/2 teaspoon of cornstarch.

You can substitute half the blueberries with raspberries or blackberries for a mixed berry variation.
