Description

Rustic and comforting, these Blueberry Oatmeal Crumble Bars feature a buttery oat crust, juicy blueberry filling with bright lemon notes, and a golden, crumbly topping. Perfect for breakfast, snacks, or dessert, they’re easy to make, great for make‑ahead, and wonderfully adaptable.


Ingredients

  • Crust & crumble:

    • 1 cup all-purpose flour

    • ¾ cup old-fashioned rolled oats

    • ½ cup granulated sugar

    • ¼ cup dark brown sugar

    • ½ tsp baking powder

    • ¼ tsp salt

    • ½ tsp ground cinnamon (optional)

    • ½ cup unsalted butter, melted

    • 1 egg yolk

  • Blueberry filling:

    • 2 cups fresh or frozen blueberries

    • 2 Tbsp fresh lemon juice

    • Zest of ½ lemon (optional)

    • ¼ cup granulated sugar

    • 2 tsp cornstarch

  • Optional add‑ins:

    • ½ tsp vanilla extract in crumble

    • Chopped nuts (walnuts/almonds)


Instructions

  • Preheat & line pan: Preheat oven to 350 °F (175 °C). Line an 8×8″ pan with parchment.

  • Mix crust/crumble: In a bowl, combine flour, oats, sugars, baking powder, salt, (cinnamon), then stir in butter and egg yolk until crumbly. Reserve 1 cup for topping; press the rest into the pan.

  • Prepare filling: Toss blueberries with lemon juice, zest, sugar, and cornstarch. Spread evenly over crust.

  • Add crumble topping: Sprinkle reserved crumble evenly over berries.

  • Bake: Bake for 35–40 min until top is golden and filling is bubbling.

 

  • Cool thoroughly: Let cool fully (2+ hours) before cutting into bars. Chill for best texture.

Notes

Use cold butter and handle crumble quickly to keep texture light.

Lemon juice brightens the filling—don’t skip it.

Full cool-down ensures clean slices.

Make gluten-free with GF flour and oats; vegan with plant-based butter and flax egg.
