  • 200 grams dried pasta (or 300 grams fresh)

  • 1 tablespoon olive oil

  • 1 tablespoon butter

  • 300 grams mushrooms, sliced (cremini recommended)

  • 4 garlic cloves, finely chopped

  • 1 tablespoon fresh thyme leaves, finely chopped

  • 1 tablespoon fresh rosemary leaves, finely chopped

  • ½ cup white wine

  • ¾ cup cream

  • 1 teaspoon black pepper

  • 1 tablespoon fresh lemon juice plus zest for serving

  • 50 grams Parmesan, very finely grated

  • ½ cup flat leaf parsley, finely chopped

  • ½ cup heaped Kalamata olives (optional, rinsed)

  • Salt, to taste


Instructions

  • Cook pasta in well-salted water until just under al dente. Reserve 1 cup pasta water before draining.

  • Heat olive oil and butter in a large skillet over medium-high heat. Add mushrooms and toss in butter and oil. Leave undisturbed for 5–7 minutes, turning once or twice to brown evenly.

  • Reduce heat slightly, add garlic and herbs; cook 1 minute without browning garlic. Season with salt.

  • Add white wine and simmer until reduced (~3 minutes).

  • Stir in cream and mix well, keeping a gentle simmer (do not boil).

  • Push mushrooms to one side of the pan; gradually add Parmesan in 2–3 additions, stirring to melt each time.

  • Add lemon juice and black pepper; whisk quickly.

  • Let sauce simmer gently for 2–3 minutes until slightly thickened but still saucy.

  • Add pasta and olives (if using) to the pan, toss gently. Add reserved pasta water as needed to loosen sauce.

 

  • Stir in parsley and serve topped with extra Parmesan, lemon zest, and cracked pepper.

Notes

Ingredient tips

Use cremini mushrooms for best flavor; button or portobello work well too. Slice mushrooms thickly to retain texture.

Under-cook pasta by a minute to finish cooking in the sauce.

Ensure the sauce remains saucy in the pan, as it thickens off heat.
