Ingredients

1 ½ cups refried beans

1 ½ cups shredded cheese (cheddar, Monterey Jack, or a Mexican blend)

8–10 corn or flour tortillas

½ tsp garlic powder

½ tsp onion powder

½ tsp ground cumin

¼ tsp salt (or to taste)

Optional: 2 tbsp chopped green chilies or diced jalapeños

Cooking oil (for frying or brushing for baking)
Instructions

Prepare the Filling:
In a bowl, combine refried beans, shredded cheese, garlic powder, onion powder, cumin, and salt. Fold in green chilies or jalapeños if using. -
Warm the Tortillas:
Microwave tortillas for 20–30 seconds to soften them for easier rolling. -
Fill and Roll:
Spoon 2–3 tablespoons of filling onto the lower third of each tortilla. Roll tightly and place seam-side down on a tray. -
Cook the Taquitos:

To Bake: Preheat oven to 425°F (220°C). Lightly brush taquitos with oil and bake for 15–20 minutes, flipping halfway through.

To Fry: Heat oil in a skillet over medium-high heat. Fry taquitos seam-side down until golden brown on all sides.

Let cool slightly and serve with salsa, guacamole, or sour cream.
Notes
Use warm tortillas to prevent cracking.
Don’t overfill to avoid bursting.
Secure with toothpicks if needed for frying.
Freeze before or after cooking for easy future meals.
