Basic Cauliflower Fritters are crispy, golden, and surprisingly easy to make. These veggie-packed patties transform cauliflower into a comforting snack, light lunch, or side dish with minimal ingredients and maximum flavor. They’re versatile, customizable, and perfect for meal prep or quick weeknight dinners.
Ingredients

1 medium head of cauliflower (or ~4 cups florets)

2 large eggs

⅓–½ cup all-purpose flour or breadcrumbs

1 small onion, finely chopped

1–2 garlic cloves, minced

½ tsp salt

¼ tsp black pepper

Oil for frying (vegetable, canola, or avocado oil)
Optional Add-ins:

½ cup shredded cheese (cheddar, Parmesan, or feta)

Instructions

Cook Cauliflower:
Steam or boil cauliflower florets until fork-tender. Drain well and let cool. -
Mash:
Roughly mash cauliflower in a large bowl—leave some texture for structure. -
Mix:
Add eggs, flour, onion, garlic, salt, pepper, and optional ingredients. Mix until combined. Add more flour if the mixture is too wet. -
Shape:
Form mixture into small patties or fritters (about 2–3 tablespoons each). -
Fry:
Heat oil in a skillet over medium heat. Fry fritters 3–4 minutes per side until golden and crispy. Cook in batches if needed. -
Drain and Serve:
Transfer to a paper towel–lined plate. Serve warm with your favorite dip or sauce.
Notes
Use frozen cauliflower? Thaw and drain thoroughly before mashing.
Too wet? Add extra flour or breadcrumbs for better shaping.
Crispier fritters: Fry in hot oil and avoid overcrowding the pan.
Baking Option: Bake at 400°F (200°C) for 20–25 min, flipping halfway.
