For the Chicken:

  • 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch strips

  • 1 cup all-purpose flour

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon paprika

  • 2 large eggs, beaten

  • 1 cup panko breadcrumbs

  • Vegetable oil for frying

For the Bang Bang Sauce:

  • 1/4 cup mayonnaise

  • 2 tablespoons sweet chili sauce

  • 1 tablespoon sriracha sauce (adjust for desired spice level)

  • 1 tablespoon honey

  • 1 teaspoon rice vinegar

  • Pinch of salt

For Assembling:

  • Slider buns (12 small buns)

  • Fresh cilantro or green onions for garnish


Instructions

  • Prepare the Chicken:

    • In a shallow bowl, combine flour, garlic powder, onion powder, salt, pepper, and paprika.

    • In a second bowl, whisk the beaten eggs.

    • In a third bowl, place the panko breadcrumbs.

    • Dredge each piece of chicken in the flour mixture, then dip in the beaten eggs, and finally coat with the panko breadcrumbs.

    • Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken pieces in batches until golden brown and crispy, about 3-4 minutes per side. Remove the chicken from the oil and place on a paper towel-lined plate to drain excess oil.

  • Make the Bang Bang Sauce:

    • In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar, and a pinch of salt. Taste and adjust the seasoning by adding more sriracha for heat or honey for sweetness if needed.

  • Assemble the Sliders:

    • Slice the slider buns in half and toast them lightly in a skillet or oven for extra crunch, if desired.

    • Spread a generous amount of the Bang Bang sauce on the bottom half of each slider bun.

    • Place a piece of crispy chicken on top of the sauce, and drizzle with more Bang Bang sauce.

    • Top with fresh cilantro or sliced green onions for garnish and close with the top half of the bun.

Notes

  • Adjust Spice Level: You can adjust the spice level by adding more or less sriracha in the sauce. If you want a milder version, reduce the sriracha and increase the sweet chili sauce and honey.

  • Make-Ahead: You can prepare the Bang Bang sauce in advance and store it in the refrigerator for up to a week. However, it’s best to fry the chicken right before assembling the sliders.
