Ingredients

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 ripe banana, mashed (about 1/2 cup)

1 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 cup old-fashioned rolled oats

1/2 cup chopped walnuts or pecans (optional)

1/2 cup mini chocolate chips (optional)
Instructions

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

Beat in the egg, vanilla extract, and mashed banana until well combined.

In a separate bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually mix into the wet ingredients.

Stir in oats, and if using, fold in nuts and chocolate chips.

Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake for 10–12 minutes, or until the edges are lightly golden.

Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely
Notes
Use overripe bananas for the best flavor and texture.
Store cookies in an airtight container for up to 3 days or freeze for up to 2 months.
Add a pinch of nutmeg for extra warmth and depth.
