Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a mixing bowl, mash the bananas and set aside.
- In a separate bowl, cream together butter and sugar. Add eggs and vanilla extract, and mix well.
- Stir in the mashed bananas.
- In another bowl, combine flour, baking soda, and salt. Gradually add the dry ingredients to the banana mixture.
- Fold in chopped walnuts, if desired.
- Pour the batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the cream cheese frosting by beating the cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract.
- Once the cake has cooled, spread the frosting on top.
