Angel Chicken Rice is a comforting, creamy casserole featuring tender chicken, flavorful rice, and a rich sauce made with cream cheese, butter, and Colby Jack cheese. This easy dish is perfect for a weeknight family dinner!
Ingredients

3 cups cooked chicken, diced or shredded

3 cups cooked rice

½ cup butter, room temperature and cubed

8 ounces cream cheese, room temperature and cubed

10.5 ounces cream of chicken soup

3 cloves garlic, minced

0.7 ounce Italian dressing mix (Good Seasons recommended)

1 cup chicken stock

2 cups shredded Colby Jack cheese, divided use

Salt and pepper to taste

Fresh parsley for garnish
Instructions

Preheat the oven:
Preheat your oven to 350°F (175°C). -
Prepare the sauce:
In a medium saucepan over medium heat, combine the butter, cream cheese, cream of chicken soup, garlic, and Italian dressing mix. Stir occasionally until the butter and cream cheese are melted and the mixture is smooth. -
Add the chicken stock:
Slowly add the chicken stock to the sauce, stirring to combine. Continue cooking for 2-3 minutes, allowing the mixture to heat through and thicken slightly. Season with salt and pepper to taste. -
Combine rice and chicken:
In a large bowl, mix together the cooked rice and shredded chicken. Pour the creamy sauce over the chicken and rice mixture and stir until everything is well coated. -
Add cheese:
Stir in 1 ½ cups of the shredded Colby Jack cheese, reserving the remaining ½ cup for topping. -
Assemble and bake:
Transfer the mixture into a greased 9×13-inch baking dish. Sprinkle the remaining ½ cup of Colby Jack cheese on top. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly. -
Garnish and serve:
Once baked, remove from the oven and garnish with fresh parsley. Serve warm.
